Italian Sausage Meatball Tortellini Soup

(My family loves this soup, and if you know Johnny Mac., he is pretty tough to impress!)

Meatballs:

1½ lbs. Sweet Italian Sausage (No casing. Must be sweet Italian..not mild)

Mix well with:

1 egg,
Garlic powder,
Just a few bread crumbs
¾ cup of FRESH parmesan cheese

Make into tiny balls and brown in olive oil.

Remove when just brown and drain.


Soup:

48 oz. box of Chicken Stock (or 2 small boxes. You can use any stock but the chicken/vegetable combination is really good)
48 oz box of Vegetable Stock
3 to 5 smashed garlic cloves

Simmer together for about 30 minutes (then remove the garlic cloves)

Add meatballs after about 15 minutes

Add a little bit of shaved fresh carrot for color.

After 30 minutes add 1 package of three cheese tortellini. (I use the 9oz pkg of fresh in the dairy and egg section.)

Simmer about 10 more minutes.


I serve this with fresh shredded parmesan cheese. ENJOY!
