Chocolate Zucchini Cake

1/2 cup softened margarine

1 3/4 cup sugar plus extra for topping

1/2 cup oil

2 eggs

1/2 cup sour milk (I just add 1 tsp of vinegar to ½ cup milk)

2 1/2 cups flour

1 tsp soda

1 tsp baking powder

1 tsp vanilla

6 tbsp cocoa (I have changed this from 4 to 6 several times)

2 cups grated zucchini

1/4 cup chocolate chips plus extra for topping


Mix margarine and sugar until creamy. Mix in oil, eggs, and mild. Stir in dry ingredients and mix well. Fold in zucchini and chocolate chips. Pour batter into a 9x13 pan, sprinkle top with the extra white sugar and additional chocolate chips.

Bake for 45-50 minutes at 325 degrees.

Haven't had any for a long time. It was the best.
