Pesto Chicken

4 chicken boneless skinless chicken breasts

Pesto (I use Classico basil pesto)

Light feta cheese - crumbled

Part skim mozzarella cheese - grated

2 Tbsp. Parmesan cheese

1/4 cup Bread crumbs


Pound out each chicken breast. Spread a layer of pesto on each breast. Approximately 1 Tbsp. per breast.

Cover pesto layer with feta cheese. Lightly grate mozzarella over each breast. Doesn't need much!

Fold each breast in half and place in glass baking dish.

Mix parmesan cheese and bread crumbs and sprinkle over chicken.

Bake at 350 degrees for 45 - 60 minutes.
