Bruschetta Chicken Bake

Here is a recipe that I spotted in a magazine and tried. It was SO easy and really good!


1½ lbs. boneless skinless chicken breasts, cut into chunks.

14½ oz can diced tomatoes, UNdrained

2 cloves garlic, minced

6-oz pkg. chicken flavored stuffing mix (Stove Top Stuffing)

1 tsp dried basil

1 cup shredded mozzarella cheese


2 TBSP water & ½ cup water


Place chicken pieces in a microwave-safe shallow baking dish and sprinkle with 2 TBSP water and pepper.

Cover with waxed paper. Microwave on high for 3 minutes. Stir.

Recover and microwave on high for another 3 minutes.

Allow chicken to stand for 5 minutes, drain off water.

Preheat oven to 400º. Meanwhile, pour tomatoes with their liquid into medium sized bowl, add garlic, stuffing mix, basil and 1/2 cup water. Stir just until stuffing is moistened. Set aside.

Place chicken in greased 8x11 glass baking dish, sprinkle with cheese and top with stuffing mixture.

Bake uncovered for 30 minutes or until heated through.
