Reuben Casserole

Here is another good "Octoberfest" recipe.

Serves 5 or 6

Ingredients

1 large boiled potato

14oz. can sauerkraut

6 wieners (I like all beef, natural casing. You can use corned beef too but I haven't tried it)

1 1/2 cup grated Swiss cheese

3/4 cup Thousand Island dressing

1/4 cup Miracle Whip or Mayonnaise

1 cup rye bread croutons (see note below)

Directions

In a greased 2 qt. casserole:

Slice the cooled potato and layer on bottom.

Cover the potato with drained sauerkraut (squeeze).

Slice wieners and layer on top sauerkraut.

Sprinkle cheese over wieners.

Mix dressing and miracle whip and pour over top

(I have substituted French for Thousand Island)

Bake covered casserole 350º for 45 minutes.

Remove from oven, uncover and put the croutons around the edges and push down sides.

Bake uncovered for an additional 15 minutes.


Note: I buy a loaf of rye bread and make croutons by cubing some of the bread and toasting in frying pan with margarine. I serve the rest of the loaf with the hot dish.
