Unusual Banana Cake

Ingredients

1/2 cup shortening

1 cup white sugar

3 eggs (beaten)

2 cups flour

1 tsp. baking soda

3 med ripe bananas

1/2 cup chopped walnuts

1/2 cup cut up maraschino cherries

1/2 cup chocolate chips or bits (I use chips)

Directions

Cream sugar and shortening, add beaten eggs and blend well, beat in bananas. Add flour and baking soda, beat again. Add nuts, cherries and chocolate chips. Pour in a greased 9 x 13 pan, bake 350 approx. 25 - 30 mins. (ovens vary). While cake is warm frost with the following:


Burnt Butter Frosting

Ingredients

1/2 cup of butter (do not substitute with margarine)

4 cups confectioners' sugar (icing or powdered sugar)(start with 2 cups, add as needed)

4 tablespoons milk

1 tsp. vanilla

Directions

Place the butter in a saucepan over medium - high heat. cook, stirring constantly, until the butter is a NICE TAN COLOR. Remove from heat, add the following:

Slowly mix the confectioners' sugar and vanilla. Beat on high speed of an electric mixer until light and fluffy. Beat in the milk a tablespoon at a time until desired spreading consistency is achieved. Use frosting immediately, as this frosting will set up quickly.

OR

Place 1/2 cup butter in a saucepan over med-high heat. Cook, stirring constantly until the butter is a NICE TAN COLOR. Remove from heat, add 2 cups of powdered (confectioners' sugar), vanilla, and milk, until desired spreading consistency is achieved. Spread frosting on warm cake immediately as this frosting will set up quickly.
