Crusty Apple Cake

2 eggs

1-1/2 cup sugar

2/3 cup oil

2 tsp. vanilla

2 cups all purpose flour

1 tsp. baking soda

1/2 tsp. salt

2 cups cored, peeled and sliced apples (about 2 medium)

1 cup chopped walnuts

powdered sugar

whipped cream or ice cream for garnish


Preheat oven to 350 degrees.

Generously grease 10 inch bundt or tube pan.

Combine eggs, sugar, oil and vanilla in large bowl. Blend in flour, baking soda and salt and mix until batter is stiff but still moist. Stir in apple and walnuts. Turn batter into prepared pan.

Bake until tester inserted near center comes out clean, about 50 - 60 minutes.

Loosen cake from sides of pan and invert onto rack. Sprinkle with powdered sugar.

Cool before serving. Garnish with whipped cream or ice cream.
