Zucchini Bread

My neighbor, Carrie Turner, gave me this recipe because we would give her the zucchini from our garden and she would bake the zucchini bread and give us some and then I finally asked her for the recipe.

Makes 2 loaves


3 cups flour

1 tsp. salt

1 tsp. baking soda

1 tsp baking powder

3 tsp. cinnamon

3 eggs

1 cup vegetable oil

2¼ cups sugar

3 tsp vanilla

2 cups grated zucchini


Grease and flour 2 bread pans.

Beat eggs, oil, sugar and vanilla.

Add dry ingredients, beat well, add zucchini and stir.

Divide evenly between two bread pans and bake at 350º for 40 to 60 min.
