Pork Colombo - A slow cooker recipe

Good way to use cheaper pork. I made ½ recipe.

Ingredients

1 tbsp Vegetable oil

2 lbs Pork Shoulder cut into 1" cubes, fat removed

2 onions, finely chopped

6 cloves garlic, minced

1 tbsp minced gingerroot

1 tsp cumin seeds

1 tsp allspice

1 tsp ground cinnamon

1tsp salt

1 tsp cracked peppercorn

1 Serrano chili (hot)

½ c condensed chicken broth undiluted

4c cubed, peeled yellow-fleshed squash (acorn or butternut)

1 tsp lime zest

2 tbsp lime juice

Hot cooked rice

Directions

  1. In skillet heat oil over medium-high. Add pork, in batches and brown. Transfer to slow cooker

  2. Reduce heat to medium. Add onions and cook till softened. Add garlic, gingerroot, cumin seeds, allspice, cinnamon, salt, pepper and cook stirring for 1 min. Stir in chicken broth and bring to a boil

  3. Add squash to slow cooker. Pour contents of pan into slow cooker and stir to combine. Cover and cook on low for 8-10 hrs or on high for 4-5 hrs until pork is tender

  4. Stir in lime zest & juice and serve over rice

Personally I would use more chili and less cumin and allspice, also put in cubed potato instead of squash. I think you could put other veggies in as well.

Variation - if you want to stretch the quantity after cooking is complete add 1 can black beans drained and rinsed. Cover and cook another 20 minutes.
