Crab Cheese Crostini

Ingredients
1 baguette loaf (250-270g)
1pkg 200-270 g flaked imitation crab. (I bought reg. & put into chopper.)
½ tsp. grated lemon rind
1 tbsp. lemon juice
¼ c. light sour cream
2 tbsp. each chopped chives (or green onion) & parsley
salt & pepper
1 pkg. (250g) light spreadable cream cheese
Directions
Cut baguette into 30 - ½" slices. Place on large baking sheet. Bake 425º (220C) for 5-7 minutes or until lightly browned and crisp. Cool.
Combine crab, lemon juice & rind, sour cream, chives, and parsley. Add salt & pepper to taste.
Spread each slice with heaping teaspoon of cream cheese. Top with crab mixture.
Notes:
Recipe calls for Clover Leaf crab delectables and Philadelphia cream cheese. I did use the Philadelphia but not Cloverleaf.
Made topping day before and tastes better than when just made.
Also can't say that I used heaping tsp. on top and was still good.
Did this recipe twice this week and went over very well.
