Country Company Potatoes

Ingredients
6 – 7 medium potatoes or 1–32 oz. bag of frozen diced potatoes, thawed
1 can Cream of Chicken soup
½ cup Butter, melted
1½ cup Grated Cheddar Cheese
1 cup sour cream
1/3 cup minced onion
½ tsp. Salt
(I also add about 1/8 of a cup of milk to make it creamier)
Topping:
Combine:
1 cup Cornflake crumbs
2 Tbps. Butter, melted
Directions
Combine soup, butter, cheese, sour cream, onion and salt (and milk if using). Mix in potatoes and place in a 9x13 pan or deep casserole dish. Pat smooth and top with cornflake crumb and butter mixture.
Bake uncovered at 350º for 45 – 60 minutes. (60 minutes minimum if you use the packaged hash browns)
