Green Tomato Raspberry Jam

Finally, something to do with all of those green tomatoes, rather than waiting for them to ripen.

Here is a recipe that I just tried and it is really good.....considering the thought of the main ingredient......

4 cups chopped green tomatoes
4 cups 
white sugar
2  3-oz. 
pkgs (or one 6-oz. pkg) raspberry (or strawberry) flavored gelatin mix 
Chop green tomatoes in food processor.  Combine chopped tomatoes and sugar in a large saucepan and bring to a boil over medium heat.  Stir and cook for 10 minutes.  Add gelatin mix, reduce heat to low and simmer for 20 minutes.  After stirring in gelatin, I use kitchen scissors to cut up the tomatoes a little bit.
Spoon into hot, sterilized jars and seal; or pour into freezer containers and freeze.  
Makes 5-250ml jars.
