Zucchini Hot Dish

Makes a 13x9 pan

 

7 cups zucchini, sliced

2 cups carrots, shredded

3/4 cup onions, chopped

5 Tbsp. Margarine or Butter 

1 can Cream of Chicken soup

1 cup sour cream

 

1 Box of Stove Top Stuffing

Grated Cheddar Cheese

 

Grease a 9 x 13 pan.

Par boil Zucchini for 5 minutes, drain and set aside.     

Sauté the carrots and onions in the butter.

Mix the soup and sour cream together in a large bowl, then mix in the zucchini, carrots and onions.

Mix stove top stuffing with seasoning packet.                 

Layer half of the dressing in the bottom of the pan,

Spread all of the zucchini mixture next.  

Sprinkle remaining dressing on top.

 

Cover and bake for 35 minutes at 350º. 

Uncover and top with grated cheese.  Bake an additional 10 minutes.

 

Note:  If baking right away – bake at 350º for a total time of 45 minutes.

If making ahead and starting with it cold from the fridge – Bake at 350º for approximately 1¼ hours.
