Foil-pack Chicken Fajita Dinner

Ingredients

1½ c instant white rice, uncooked *

1½ c hot water

1 Tbsp taco seasoning mix (I didn't read this & used the whole pkg & will do the same again as very tasting so use your own judgment)

4 small boneless, skinless chicken breasts

1 each: green & red pepper, cut into strips

½ c salsa *

½ c shredded Tex-Mex cheese *

Directions

Heat oven to 400ºF.

Fold up all sides of each of four 18x12" sheets of heavy duty foil to form 1" rim; spray foil with cooking spray.

Combine rice, water & taco seasoning; spoon onto centers greased foil. Top with remaining ingredients.

Bring up foil sides. Double fold top & ends to seal each package, leaving room for heat circulation. Place in 15x 10x 3/4" baking pan.

Bake 30-35 minutes or until chicken is done. Let stand for 5 minutes. Cut splits in foil to release steam before opening packets.


* Notes: To me there is a little too much rice so next time will adjust or do extra packet. Will also use more cheese & salsa.
