California Chicken and Almond Rice

This is the best chicken ever!!!

 

chicken breasts ...skinless and boneless

2/3 cups flour

1 tsp. salt

1/2 tsp. Each: celery saltgarlic salt and nutmeg

1/4 cup melted butter

Mix dry ingredients; Dredge chicken in flour and then fry in melted butter until browned.  Place in greased roasting pan.

Then a sauce will be made to cover chicken with.

 

Sauce:

1 cup pineapple juice

1/2 cup soy sauce

2 tbsp. sugar

Mix together and pour over the cooked chicken.

 

Make rice dish now so that it can be cooked at the same time as the chicken.

Combine in a greased casserole dish:

1 1/2 cup long grain rice

3 cups chicken broth

1 1/4 tsp. salt

Rice is cooked with a lid on the dish.

 

Chicken is cooked uncovered and basted every 15 minutes.

Bake both for 60 minutes in 350º oven.

 

Just before serving rice stir in 3/4 cups of slivered almonds that have been sautéed in 3 tbsp. butter until golden brown.

 

The work is well worth it!
