Beef in a Bun

I love overnight, easy dishes. This is one of my favorites.

Ingredients

4 lb. roast (cross rib or any lower priced roast)

1 bag of onion soup mix

1 can of Coke - you can use Pepsi, it's just not as good

1 cup of ketchup

Salt, pepper, garlic

Directions

Put frozen roast in roasting pan. A roaster that is a little bigger than the roast, you want some room for the sauce to mix.

Sprinkle roast with salt, pepper, and garlic. Mix onion soup mix, coke and ketchup than pour over roast.

Put lid on roaster and put in the oven around 9 or 10 p.m. Put the oven at 200º.

I usually wake up around 3 a.m. to the smell of something really good cooking.

In the morning, get a smaller roaster and set aside. Remove roast from pan and put on cutting board. Shred roast with a fork and put into new roaster.

Take the juice from the 1st roaster and set over element and stir to thicken up just a bit.

Pour over the shredded roast.

I usually refrigerate, as it is now 7 or 8 a.m. I reheat on the stove top at a lower temperature and stir quite often.

Serve in hamburger buns or croissants.

I usually cut up tomatoes and whatever cheese I have on hand to compliment the beef on a bun.
