Fruit Salsa and Cinnamon Chips

By Barb Jodoin

Fruit Salsa

kiwi, peeled and diced

2 Delicious apples, peeled, cored and diced

1½ cup raspberries

2 c strawberries, cut up

Hand full of blueberries

peach, peeled and diced

(You could probably add any fruit; it’s all about what you like)

2 T white sugar

1 T brown sugar

3 T fruit preserves, any flavor (I used raspberry jelly)

Combine all ingredients.  Cover and chill in the fridge for at least 15 minutes

Cinnamon Chips

10 (10 inch) flour tortillas

Cooking spray (butter flavored)

2 cups cinnamon and sugar

Preheat oven to 350º.

Coat one side of each flour tortilla with spray.  Cut into wedges and arrange in a single layer on a cookie sheet.

Sprinkle with cinnamon and sugar and spray again.

Bake for 8 to 10 minutes.

Repeat process until all tortilla's are cooked.

Let cool 15 minutes.  Serve with chilled salsa.

This "Salsa" would be great on ice cream or angel food cake.
