Cheddar Curry Cheese Spread

1 8-oz package cream cheese

1 8-oz or 9–oz. jar of sharp cheddar cheese spread

1 ½ tsp. curry powder

2 Tbsp. good sherry

½ cup grated sharp cheddar cheese (optional)

¼ cup unsalted almonds (optional)

1 jar mango chutney (or your favorite)

2 tsp. thinly sliced scallions (optional)

2 tsp. slivered almonds (optional)

                             

Put first 4 ingredients into a food processor and process until well blended.  If you wish, add grated cheddar cheese and/or unsalted almonds.  Refrigerate in covered container overnight.

 

When ready to serve, spoon into a serving dish and cover with a layer of chutney.  Sprinkle with slices scallions and/or almonds.

 

Best with crispy wheat crackers.
