Two - 2½--3 lb ready to cook broiler chickens, cut up ( I used boneless chicken breasts cut up) ¼ c flour 1¼ tsp. Salt 2 tbsp cooking oil 1 -6 oz can frozen lemonade concentrate, thawed 3 tbsp brown sugar 3 tbsp catsup 1 tbsp vinegar 2 tbsp cold water 2 tbsp corn starch Hot cooked rice
Save backs, necks & wings for chicken broth.
Combine the flour with salt and coat chicken thoroughly. Heat oil in large pan and brown chicken on all sides; drain; transfer to crockery cooker. Stir together lemonade concentrate, brown sugar. catsup, and vinegar; pour over chicken. Cover, cook on high setting for 3-4 hrs. Remove chicken; pour liquid into saucepan. Return chicken to slow cooker. Blend cold water and corn starch; stir into hot liquid; cook & stir until thickened. Serve chicken with gravy over rice.
Next time I make this I will try adding some lemon juice for more of that taste, but very good. |
