Orzo Pilaf

Servings: 4 (1/2 cup each)


2 Tbsp. Butter

1 cup (about 6 oz) Orzo, uncooked

2 Tbsp finely chopped onion

2-1/3 cups hot water

2 chicken, beef, or vegetable bouillon cubes

Chopped fresh parsley (optional)


In 10 inch non-stick skillet, over medium heat, melt butter.  Stir in uncooked orzo and onion.  Cook, stirring frequently until orzo is lightly browned, about 3 minutes.  Stir in hot water and bouillon cubes.  Heat to boiling.  Reduce heat, cover, and simmer 12 minutes or until most of the liquid is absorbed, stirring occasionally.  Garnish with parsley, if desired.
