Almond Salad

1 medium head of lettuce

1 cup cashews, chopped

1 cup craisins (cranberry/raisins), chopped

pear, cubed

apple, cubed

 

Dressing:

1/4 cup oil

1 Tbsp. white vinegar

1/8 cup sugar

1 1/2 tsp. Almond extract

 

Prepare dressing.  Pour over salad and toss.  Serve immediately. 

Dressing can be made ahead of time and chilled.
