This cake can be baked in a tube pan or a bundt pan.
¾ c. butter 2 c. sugar 2 eggs 2 t. orange juice 2 t. vanilla ½ c. milk ½ c. cocoa 2 ½ t. baking powder 1 t. salt 2 c. shredded zucchini Add dry ingredients alternately with milk. Stir in zucchini. Blend in 1 C. powdered sugar and ½ t. vanilla. Add small amounts of hot water from bottom of double boiler, blending well after each addition, until glaze is smooth and of spreading consistency.
Notes: A bundt pan can be used in place of the tube pan. |
