Here is a coveted recipe from my son Joe. He worked in a coffee shop and these scones were baked daily...they were always very popular.
4½ cups flour 1½ cups sugar 4½ tsps baking powder ½ tsp salt ¾ cup shortening ¾ cup margarine 2 eggs in a measuring cup and fill with milk until 3/4 cup full. Whisk these together.
Combine dry ingredients in a large bowl, make a well in center and add wet ingredients. Mix with your hands so as not to over mix, just until all moisture gone. Place small mounds on a cookie sheet. Sprinkle with raw sugar (if you have it) Bake 400 F for 14 minutes.
If you want to add extras, divide your dry ingredients into separate bowls. Add your extras and then divide wet ingredients into each bowl. Mix as per above Some combinations are....... - white chocolate chips and raspberry's - orange zest and fresh blueberries - chopped apple and cinnamon - raisins
Enjoy! |
