Rhubarb Muffins

1 1/2 cups brown sugar 
1 beaten egg 
1 cup buttermilk (can substitute 1/2 sour cream and 1/2 milk or use whipping cream) 
1 tsp vanilla 
1/2 cup oil 
2 cups rhubarb, cut in small pieces 
2 1/2 cups flour 
1 tsp salt 
1-2 tsp cinnamon 
1 tsp baking soda 
1 tsp baking powder 
Additional cinnamon and sugar mixture 

Sift dry ingredients.  In another bowl combine egg and sugar, beat well.  Mix in oil and vanilla.  Once well blended mix in flour mixture.  Then alternate buttermilk and rhubarb.  Put in muffin tins and sprinkle with cinnamon and sugar mixture. 


Bake 20 minutes at 400º.
