Chocolate Zucchini Tube Cake

This cake can be baked in a tube pan or a bundt pan.

 

¾ c. butter

2 c. sugar

eggs

2 t. orange juice

2 t. vanilla

½ c. milk
2 ½ c. flour

½ c. cocoa

2 ½ t. baking powder 
1 ½ t. soda
1 t. cinnamon

1 t. salt                                                

2 c. shredded zucchini

Cream butter & sugar until light and fluffy; beat in eggs, orange juice, and vanilla. 

Add dry ingredients alternately with milk.  Stir in zucchini.
Bake in greased and floured tube pan 1 hour at 350º.

Glaze
In top of double boiler, melt 2 squares unsweetened chocolate with 3 T. butter

Blend in 1 C. powdered sugar and ½ t. vanilla

Add small amounts of hot water from bottom of double boiler, blending well after each addition, until glaze is smooth and of spreading consistency. 

 

Notes:  A bundt pan can be used in place of the tube pan.
